boneless skinless chicken breasts
pepper jack cheese
Portion chicken into serving-size pieces. Butterfly each piece of chicken so it forms a pocket. Fill with a spoonful of BBQ sauce and a slice of cheese. Fold to close. Grill until chicken is cooked through, about 10 minutes, basting with additional BBQ sauce, if desired.
This was some delicious and super easy chicken!! I didn't put a quantity on the ingredients because it really can make as much or as little as you want. If you click on the link above and go to the original site, you will find freezing directions as well. I like the idea of making a bunch ahead of time and freezing. We had some trouble with the cheese staying it, so next time we are going to try securing it with toothpicks. Also, we laid tinfoil on the grill to keep from making a giant mess. I have a new thing for pepper jack cheese, so this chicken hit the spot. Let me know if you give it a whirl!
