Recent Reads

I don't think I've blogged about my recent book reading in a while, so I thought I would share my latest.  I just finished "Me to We:  Finding Meaning in a Material World."  It was so good!  I listened to it, as I usually do, and the reader sometimes had some crazy enunciation and inflection in his voice, but it was still really good.  So if you get started and feel that way too, keep reading!!

I had heard about it on the Haus of Girls blog.  She posted a few times about how good it was and how it really spoke to her.  She posted so much about it that I had to read it.  There are so many different soul-stirring stories and just eye-opening statistics.  It talks about the importance of community, the pursuit of happiness, and the way kids can do big things for our world.  It talks about humanity and how we block out what isn't happening in our cozy, comfy little corner of the world.  I can't recommend this book enough.  If you are looking for something to read, read this!  Then let me know so we can talk about it!!!
I listened to "The Pioneer Woman:  Black Heels to Tractor Wheels" when I was traveling to and from my weekend getaway to Galena with the girls.  It's a very cute love story written by Ree Drummond, the Pioneer Woman.  If you don't know who she is, you might be living under a rock. :)  It was an easy read, and I would recommend it!
And last but not least, "Worship on Earth as it is in Heaven."  We read and studied this for our small group.  It taught me so many things -- not to have false idols, giving God your best worship on Sundays, just to name a few.  We had some great discussions while going through this, and I will definitely be digging back into it from time to time.  If you are looking for a spiritually uplifting book, this one is it!
So that's what I've been reading lately.  What about you?  Anything I need to get my nose into -- err, I mean, my ears listening to?  I need to bulk up my list.  It's getting a little thin.

Race Day

I forgot to post these pictures from last night.
We did some sidewalk chalking.
And BigWheels riding.
This morning Roger, T.J., Keriann & Derrick headed to the track for the Indy 500.  Abby and I took the kids to the children's museum.  It was so fun for them, and exhausting for us!  It was so busy there, and trying to keep them all together was rough.  They all really loved it, though, so it was so worth it!  I can't wait to go back again soon!

That's all the pictures I got.  After that, my phone was put away and I was chasing Miles around like a crazy lady.  This kid is FAST!  Why did I wear flip flops instead of my sneakers??

Roger got different seats from the last time we went.  Check these out!  Right by the start/finish line.  And they got to sit in folding chairs, which would be way better than the bleachers.  AND they only had to sit in the sun for the first 30 laps, then were in the shade the rest of the time.  It was a sizzling 91 degrees today.  They predicted that the track  would be around 140 degrees today.  That's hot!!  
The Wassons got on the road this evening after dinner, and we miss them already!!!  We can't wait to make a weekend trip down to see them soon!

Indy 500 Festivities with the Wassons

Roger, Abby, Ari & Ezra made the trip here this weekend for the Indy 500 race.  We've had so much fun thus far, and I wanted to share some of our pics.  Yesterday we got Miles' new pool out and he had a blast breaking it in.  The slide into the water is a big hit!


When Ari & Ezra got here, they jumped right in, and burned some energy off from their long car ride. 
We grilled out for dinner, and the kids at outside.

We played lots last night, wearing all of us out!

Then today was parade day.  It was a hot one, topping out at 93 degrees.  It wasn't too bad in the shade, which is what our seats were for the first half of the parade.  But when our shade retreated, it was pretty darn hot sitting there in the sun!  Luckily the kids loved watching all the floats, balloons, bands, race cars, horses, and even our cop patrolling our bleacher area.

Like I said, we cooked in the sun today, but it was so fun and worth it!  Miles was in awe of everything, and loved clapping and waving at everyone.  Another Indy 500 parade in the books!

Mexican Stuffed Shells

Mexican Stuffed Shells

1 lb. ground beef
1 pkg taco seasoning
4 oz. cream cheese
14-16 jumbo shells
1.5 c. salsa
1 c. taco sauce
1 c. cheddar cheese
1 c. monterey cheese
3 green onions
sour cream

In a frying pan cook ground beef, add taco seasoning - cook according to directions on packet.  Add cream cheese - cover and simmer until cheese is melted.  Blend well.  While ground beef is cooking, cook pasta according to directions on package, drain.  Set shells in cooking sheet/cutting board and separate so that they don't stick together.

Pour salsa on bottom of 9x13 cake pan.  Stuff each shell with meat mixture and place in cake pan on salsa with open side up.  Cover shells with taco sauce.  Cover cake pan with foil and bake 30 minutes.  After 30 minutes add cheese and green onion (black olives if you wish).  Bake another 10-15 minutes uncovered.  Serve with sour cream



These food pictures are hard to take, friends!!  It's hard to believe that anyone can take pictures of food and make it look good.  These were yummy, though, and a new alternative to the plain ol' taco!

Garlic Chicken Breasts

Garlic Chicken Breasts

1/2 cup grated Parmesan cheese
1 envelope garlic and herb or Italian salad dressing mix
2 boneless skinless chicken breast halves

1 - In a large Ziploc gallon bag, combine cheese and dressing mix; add chicken.  Seal bag and shake to coat.
2 - Place chicken in a greased 8-in. square baking dish.  Bake, uncovered, at 400 degrees for 20-25 minutes or until a meat thermometer reads 170 degrees.



Please excuse the awful phone pic, but know that this chicken was delicious!!  It's super easy to make, or so T.J. says:)  Keriann recommended it to us, so it gets her stamp of approval too.

Don't mind my giggle when he slips and falls.  Bad mommy moment -- oops!  But he's fine.  He falls all the time:)  Since watching the video himself, he fake falls and whines sometimes too.  Faker!!!

Cleaning out my closet

Since having Miles, my sizes have constantly been changing. Thank goodness for that!! The only problem is that my closet was a wreck! I had pants spanning four sizes in there sharing shelf space. So I finally got a few spare hours to go through it all. Here is my Goodwill pile!


And here is the pile I'm keeping that's too big. I'll hopefully need it some day with baby number dos. Or maybe I won't need it because I'll stay fit and skinny throughout my pregnancy. Or maybe I'll need them. :). I'll keep them just in case.


I will hopefully get some blog posts scheduled out tomorrow. We've tried a few new recipes I wanted to share, along with Miles' usual shenanigans.

Bike Rides

Tonight Miles and I went on a long bike ride. We rode from our house over to Keriann & Derrick's. They live all the way across town; but lucky for us, the ride was mostly trails. The seat part doesn't look too comfy for Miles, but he doesn't seem to mind one bit.







And a side note -- Miles has gone pee a few times in the big boy potty. It's pretty crazy what an M&M will do when it comes to going. Hopefully he can just train himself up on this one because his mommy and daddy are clueless!!

Iowa Weekend -- Day 4, Sunday

Sunday morning we got up and went to church with mom in Newton.  From there we headed to Altoona for a bite to eat with Mike & Julie.  We were going to go to eat brunch at Prairie Meadows, but the line was huge.  We went to Claxton's for some more BBQ instead.  Our third and final BBQ restaurant in one weekend.  That's a lot of BBQ!!

The only picture I took there was Miles riding their pig.
After that we headed back to Baxter for some playing with Quinn, Matt & Becky.

We went on some walks.
